But the term “ebonized” has been diluted by the market. A black-painted MDF dining table and a properly ebonized solid oak table both appear dark. The similarity ends there. What ebonizing actually is
True ebonizing is a chemical process, not a coating. The most traditional method uses a solution of iron acetate — steel wool dissolved in vinegar — applied to the raw wood surface. The iron reacts with the tannins naturally present in the wood, producing a dark grey-to-black coloration that penetrates the grain rather than sitting on top of it. The result is a surface where the wood grain remains fully visible — darkened, deepened, but structurally unchanged.
A second method is fumed ebonizing, where the wood is exposed to ammonia vapour in a sealed chamber. The ammonia reacts with the tannins to produce a warm, rich darkening that can range from deep amber-brown to near-black depending on the duration of exposure and the tannin content of the species. Fumed oak is one of the most distinctive and most beautiful results of this process — its grain takes on a three-dimensional quality that no stain can replicate.
A third approach is charring, or shou sugi ban, a Japanese technique where the surface of the wood is briefly torched to carbonise the outer layer, then brushed and oiled. The result is a textured, matte black surface with visible carbon grain structure. At dining table scale, charring is the most dramatic of the three — and the most divisive.

Not all wood species respond equally to chemical ebonizing. How to identify authentic ebonizing — and how to spot the approximations
The difference between a chemically ebonized surface and a black-stained or black-painted surface is visible at close range but easy to miss in a showroom photograph. Three tests resolve the question quickly.
- Grain visibility at edge: on a chemically ebonized top, the grain is as visible at the edge profile as on the flat surface. On a painted or stained surface, the edge often shows a different tone or texture.
- Colour variation across the slab: chemical ebonizing reacts with the natural tannin variation within the wood. A surface with perfectly uniform black colour is almost certainly painted.
- Surface texture: an ebonized surface retains the wood’s natural texture. A painted surface is typically smoother and more uniform to the touch.
- Weight confirmation: ask the supplier for the species, the ebonizing process used, and the finishing oil or wax applied.
